My son is in half-day Kindergarten This year. Even though it is only 2.5 hours long, they feel the need to serve "snack." The school provides Goldfish crackers for the kids who don't bring their own snacks. So, I found these Halloween cookie cutters with inner shape cut-outs at the store today and used the middle pieces to make snack rice crackers (food coloring added)!!!

Leftovers tonight
Jack is fasting for a scope series tomorrow at Children's. He spent the day drinking water, diluted apple juice, and basic clear chicken stock I made 2 days ago in the crock pot.

Crunchy Pretzels
Today is Jack's last day of solid foods for the next 2 days because he has a GI scope series on Tuesday. So, he requested I make him some pretzel sticks. I decided to try some twists too. I have not found any "recipes" out there nearly as limited as we are, so I fully improvised. I think they turned out really great. Jack agrees!

Pasta w/ meat sauce
Very basic rice pasta dish. Zucchini from the garden, ground pork, ground beef, tomatoes, and some basic safe spices.

I need to play catch-up this weekend, and then my son will be doing the prep for a GI scope next week, so he'll be fasting for 2 days (Monday and most of Tuesday).
Last night we had short ribs, rice, and steamed broccoli. However, Jack reacted to something. Maybe pollen on the broc since it is hard to wash that off well enough.

My Birthday
Today was my birthday, so my husband cooked dinner. :) He made smoked pork ribs and we had steamed carrots on the side. For dessert, we had a very basic cake.

Sous Vide Steak
My husband made a few sous vide steaks, and I baked a couple sweet potatoes and cooked up some chard and beet greens. :) Basic minimal seasonings for the boy.
